I don’t know about you but I love desserts and especially chocolate in particular. There’s just something magical about chocolate (or cacao, cocoa) as it’s often called.

Is it texture or the flavor? Perhaps it’s that warm smell of chocolate chip cookies we remember baking in the oven as kids. I don’t know why I love chocolate so much I just do. I could eat it morning noon and night.

When I realized you could eat organic, free trade, raw chocolate that’s good for you, I couldn’t help but be excited about the possibilities. There are even courses now that teach you how to make raw chocolate yourself right in your own home.

One of Jeanne Calment’s secrets for living to 122 was eating a couple pounds of chocolate per week. I know David Wolfe who has done a lot of extensive work studying cacao mentions a lot of this in his book called Naked Chocolate. Heck chocolate is so good I’d be tempted to eat it, even if it weren’t so darn healthy for you.

Cream Layer:
1 1/2 cups raw cashews or macadamia nuts (160g)
1/8 tsp salt
scant 1/4 tsp pure peppermint extract
1/2 tbsp pure vanilla extract
1/4 cup virgin coconut oil (40g)
2 Nunaturals stevia packets, or 2 tbsp liquid sweetener (such as pure maple syrup)
3 oz raw spinach (85g or 2 very-loosely-packed cups)

Crust Layer:
1/2 cup raw almonds, walnuts, pecans, or a combination of these (or sunflower seeds for nut-free)
1/2 cup shredded coconut, unsweetened (I used the full-fat kind)
scant 1/2 cup pitted dates (8 small dates) or raisins

Approx. 24-28 fresh strawberries
1/4 cup cocoa powder or raw cacao powder, sifted
1/4 cup pure maple syrup (or agave)
1/4 cup coconut oil (no subs)
1 tbsp all-natural nut butter (I used cashew butter)*
1/4 scant tsp fine grain sea salt, or to taste
Unsweetened shredded coconut, to garnish
